Our gherkin plants are compact with balanced growth and quick fruit set. Expect uniform, small fruit with an extended harvest window when grown under suitable conditions.
To prevent bitterness and stress, we recommend protecting plants from extremes: provide shade during hot spells, shelter from excess cold, and keep soil moisture deep and consistent. Strong airflow helps reduce disease pressure.
Plant Care
Seedling Height: Our gherkin seedlings are typically 15–20 cm tall including the root system.
Spacing:
- Rows: 90–120 cm apart (60–90 cm on trellis works well)
- Plants: 30–45 cm apart within the row
Harvest Time: Begin harvesting around 7–10 weeks from transplant, noting timing varies with weather and location. Pick frequently to maintain grade and encourage ongoing set.
Preferred Growing Conditions

Traditional Pickling Tips (down the bottom)
1) Classic Lacto-Fermented Gherkins (no vinegar)

Brine strength: 2.5–3.5% salt by weight. Example: 30–35 g salt per 1 L water.

Prep: Wash fruit, keep whole, trim blossom end (1–2 mm) to prevent softening.

Pack: Add garlic, dill heads, mustard/coriander seeds, peppercorns. Optional tannin source (grape/cherry/tea leaf) to keep them crisp.

Weight & seal: Keep fruit submerged under brine (fermentation weight). Use a jar with an airlock or “burp” daily.

Ferment temp/time: 18–22 °C for 5–10 days for half-sour; 10–21 days for full sour. Taste and move to fridge when you like the tang.

Crispness keys: Fresh, small fruit; cool ferment; steady submersion; correct salt.
2) Traditional Vinegar “Quick Pickles”

Brine base: Use 5% white vinegar. Common ratio: 1:1 vinegar:water with 2–3% salt (20–30 g per litre total liquid).

Optional sugar: 10–50 g per litre for balance (to taste).

Spices: Dill, garlic, mustard seed, bay, peppercorns.

Method: Pack jars tightly, bring brine to a boil, pour hot over gherkins, tap to release bubbles, seal.

Hold: Chill after cooling for 48–72 hours before eating; flavours develop over 1–2 weeks.
Food-Safe Basics

Use clean, heat-safe jars/lids; sterilise before filling.

Always keep fruit fully submerged (fermented) and refrigerate after fermenting or once opened.

If anything smells off, shows slime, or significant mould growth on the fruit (not just surface kahm yeast in ferments), discard.
