Gherkin is a compact, productive cucumber-type plant grown for its small, uniform fruit and excellent pickling quality. Plants have balanced growth, quick fruit set and an extended harvest window when grown in suitable conditions.
This variety is ideal for growers wanting crisp, small-format fruit for fresh use, traditional pickling and fermented gherkins. Frequent harvesting helps maintain fruit grade and encourages continued production throughout the season.
Each QPS Gherkin seedling is supplied as a live, nursery-grown transplant-ready plant. QPS has already handled the germination and early growth stage, giving growers a strong start and a faster path to harvest.
A healthy live Gherkin seedling at the transplant stage, approximately 15–20 cm tall including the root system. Plant carefully to minimise root disturbance, then water deeply at the base and keep moisture consistent.

🥒 Fresh Eating, Pickling & Kitchen Uses
Fresh use: Pick young for the best crunch and mild flavour.
Pickling: Small, freshly harvested fruit are ideal for vinegar pickles and lacto-fermented gherkins.
Harvest tip: Pick often to prevent oversized fruit and to encourage the plant to keep producing.
🫙 Traditional Pickling Tips
Use a 2.5–3.5% salt brine. As a guide, use 30–35 g salt per 1 L water. Wash fruit, keep whole and trim 1–2 mm from the blossom end to help prevent softening.
Pack with garlic, dill heads, mustard seed, coriander seed and peppercorns. Optional tannin sources such as grape, cherry or tea leaves can help maintain crispness. Keep fruit fully submerged under brine using a fermentation weight. Use an airlock jar or burp daily.
Ferment at 18–22°C for around 5–10 days for half-sour gherkins, or 10–21 days for full sour. Taste regularly and refrigerate once the flavour is where you like it.
Traditional Vinegar Quick Pickles
Use 5% white vinegar. A common brine ratio is 1:1 vinegar to water with 20–30 g salt per litre of total liquid. Add 10–50 g sugar per litre if desired for balance.
Pack jars tightly with gherkins, dill, garlic, mustard seed, bay leaves and peppercorns. Bring brine to a boil, pour hot over the fruit, tap jars to release bubbles and seal. Chill after cooling and allow 48–72 hours before eating. Flavour continues to develop over 1–2 weeks.
🧼 Food-Safe Pickling Basics
Once opened, store pickles in the fridge. If anything smells off, becomes slimy or shows significant mould growth on the fruit, discard it. Light surface kahm yeast can occur in ferments, but mould on the fruit itself is not safe to keep.
🐛 Pest & Care Notes
Common issues: bitterness from heat or water stress, fungal leaf issues from poor airflow or wet foliage, and fruit rot when fruit sit directly on damp soil.
Best defence: steady moisture, base watering, straw mulch, good spacing, strong airflow, gentle training and protection from temperature extremes.
Gherkins are all about consistency. Keep water deep and steady, protect plants from heatwaves and excess cold, and pick fruit frequently while small for the best crunch, flavour and ongoing production.
