Endive is grown like lettuce and used in salad mixtures to accompany milder flavoured lettuce to provide a "little bite" to the flavour. A crinkly leaf that’s slightly bitter in taste, it can be blanched by tying the leaves together to protect the central rosette while growing which helps remove some of the bitterness. Avoid growing close to anything in the Allium family such as garlic or onions.
